D'iamico Chicken Pasta Salad

Continuing with our summer recipes this week, here is one of my all-time favorite pasta salads. I don't care for mayo, and with the addition of poppyseed dressing, you can't even taste the mayo! It's a sweet and colorful salad for a warm day and makes great leftovers for lunches.

D'iamico Chicken Pasta Salad
4 cooked and cubed chicken breasts
2/3 box of rotini pasta (really any pasta works)
3/4 cup celery diced
3/4 cup red onions diced (optional)
3/4 cup poppyseed salad dressing (I add more!)
2/3 cup reduced calorie mayo
1 bag dried craisins
1 bag shaved or slivered almonds

Directions:
Cook pasta according to instructions, rinse with cold water and drain well…do not overcook!
In a large bowl mix mayo and poppyseed dressing
Add all the other ingredients except almonds
Refrigerate for several hours until well chilled
Just before serving add almonds and an extra squirt of mayo or poppyseed to freshen it up.
